Kinsley evokes a spirit of innovation and diversity, inspired by the ultimate Fairgrounds of old, the 1893 World’s Columbian Exposition and its gleaming white city.
A full-service kitchen offers additional variety and choice with chef-inspired fare from around the globe. Seasonal ingredients and rotating menu items allow for the discovery of different flavors to delight every guest and craving. Service options vary for those wanting to relax in the modern dining room gleaming architecture, as well as convenient grab-and-go for guests on the move.
Kinsley’s Fairgrounds cafe features a wide selection of craft coffee roasters, colorful teas and elixirs, and an array of cold brews, lattes and sparkling beverages on tap, with tasting and exploration encouraged in a “Taste One Taste All” atmosphere. Kinsley will also tout a cocktail bar, featuring unique and whimsical tonics and elixirs.
Kinsley’s name originates from famed restaurateur Herbert M. Kinsley, who was hired by architect Daniel Burnham to plan the restaurant landscape of the 1893 Chicago World’s Columbian Exposition. As part of this initiative, he opened Kinsley’s, a long time icon of the Chicago restaurant scene, and a pioneer in promoting equal service to all guests.
